Every now and then you'll come across a recipe. One that knocks your taste buds outta the park. And then you find out that the ingredients are not in fact a long list of crap, but a list of nourishing, nutritious, raw foods that'll make your heart sing. Literally. Cacao. For the heart yeah?
This recipe is from a dear friend of mine who I used to make, test, eat, try, create and sell raw treats with in Sydney for a very short period of time. It was a couple of years later I asked for this recipe and she rolled it off her tongue as though she had made it the previous week.
Let's all pause for a moment to pay thanks top that gorgeous friend, and this freakin unreal recipe!
--------------------------------------------------- ok then
These babies are jam packed with dried fruit making them a rather sweet treat, and perfect when you want something chewy, chocolatey, rich and perfect for the soul. They are also rich in nut proteins and fats making them super satiating. So go easy coz they'll fill you up real proper!
What you'll need:
1 cup pitted medjool dates
1/2 cup currants or raisins
1/2 cup goji berries
1 jar of ABC nut butter
1/4 cup coconut oil
3/4 cup cacao powder
1/8 cup lucuma powder
1/2 cup walnuts
Throw everything except the walnuts in your food processor and blend until reasonably well combined and integrated together. Add the walnuts and keep blending, stopping when your mixture has combined but there are still chunky walnut bits.
Push the mix into a square tin lined with baking paper and flatten to shape. Use extra walnuts and goji berries to press into the top of the slice for decoration.
Using a sharp knife, cut the slice into squares pieces, and chill in the fridge or freezer until firm.
And try not to eat them all at once.
WARNING: These are addictive
If you make these babies be sure to give me a shout on social media so I can have a geez...
