If you're like me and luuuurrrve pancakes but never make them as you don't have enough time to wait over the fry pan ensuring they don't burn for half an hour, that they don't stick, making sure they will flip, and so on... this recipe is for you.
If you've got enough time to whisk a few ingredients into a bowl, pour this into your pan, then go shower and get dressed, come back and flip it (yep, just one nice satisfyingly delicious filling pancake just for you), then you can do this. And as a bonus, all grain free, gluten free, dairy free lovers can rejoice! Ooh I forgot to mention it's also sugar free!
This recipe is for one person, but can be easily duplicated for more mouths.
What you'll need:
2 eggs
1/4 cup protein powder*
1/2 mashed banana
1 tsp flax meal
cinnamon
Handful of blueberries (fresh or frozen)
Mash your banana first in one bowl. In another bowl mix your eggs and protein powder trying to get most lumpy powdery bits out. Then throw your banana in, with the remaining ingredients. If need be, add a splash of milk or water but I've never needed too.
Heat a small non stick frypan on low, and add a little coconut oil or butter to melt. Then pour your pancake mixture in and add your handful of blueberries on top. You must keep the heat on low or you'll have a burnt base and an uncooked middle. Wait until you start to see bubbles forming on the top before flipping your pancake. This can take 10-15 minutes, so this is the perfect time to get ready for your day - quick shower, get dressed, pack your lunch, make a pot of coffee, check your emails, whatever it might be. I love that I feel like I've got 10 minutes of total me time here.
Once you flip your pancake it will only need a few minutes to brown and then it's ready.
Serve with the other half of your banana (sliced), drizzled coconut nectar or maple syrup, extra cinnamon, or some coconut oil. Anything goes!

*I sometimes mix my protein powders up, and for this recipe used a
carob protein powder that has stevia and cinnamon through it. Any
protein powder will do, but just make sure it's one you like.
